| 预制菜迎合了餐饮市场降本增效和人们快节奏生活的需求, 因其便利、快捷等优势受到餐饮企业和消费者的青睐. 考虑餐饮企业以预制菜为食材进行线下和线上销售的全渠道经营模式, 通过与传统式顾客线下排队就餐的基本模式比较, 探讨不同销售模式下顾客需求和等待时间以及餐饮企业服务能力和利润的变化, 为餐饮企业选择销售模式和数字化转型提供决策参考. 研究表明, 餐饮企业使用预制菜在一定条件下有助于缓解就业, 且雇佣成本高的餐饮企业也有动机招聘更多的服务人员. 餐饮企业使用预制菜在一定条件下可以缩短顾客等待时间, 提升顾客需求, 但在预制菜线上销售模式中, 尽管等待时间更长, 顾客需求仍可能增加. 餐饮企业预制菜销售模式选择与预制菜成本、顾客对等待时间的敏感性、预制菜出餐速度以及线上点餐的便捷性有关. |

| Pre-cooked dishes address the catering market’s need for cost reduction and accommodate people’s fast-paced lifestyles, making them popular among businesses and consumers due to their convenience and speed. This paper presents the omnichannel business models in which a restaurant utilizes pre-cooked dishes for both offline and online sales. By comparing with the basic model that customers queue for dining offline, this paper examines the changes in customer demand, waiting time, service capacity, and profitability under the different sales models. The study reveals the following findings. First, the use of pre-prepared dishes by restaurants may help to alleviate employment pressures, and paradoxically, restaurants with high hiring costs may have an incentive to recruit more service staff. Second, restaurants using pre-cooked dishes can shorten customer waiting time and increase customer demand under certain conditions. However, in the pre-cooked dishes for online sales model, customer demand may increase even though the waiting time is longer. Finally, restaurants’ choice of pre-cooked dishes sales model is dependent on the cost of pre-cooked dishes, the customer waiting time sensitivity, the speed of pre-cooked dishes preparation, and the convenience of online ordering. |
